The Best Cauliflower "Chicken" Nuggets

You'll need:


cauliflower florets

white rice flour

gluten free breadcrumbs

cumin

garlic powder

onion powder

paprika

water

salt and pepper to taste


Preheat oven to 425. Mix white rice flour with water to create a pancake-like batter. There is no "perfect" amount for this - if it's too watery, add more flour, and if its too thick, add more water. Once you've achieved the consistency you like, add salt, pepper, cumin, garlic powder, onion powder, and paprika to taste. Mix. Dredge each individual cauliflower floret in the batter completely, and then place in a bowl with breadcrumbs and coat completely again. Lay each cauliflower floret on a pan covered in parchment paper. Bake for 15-20 minutes or until desired crispiness is reached. Top with your favorite condiments, some cheese, scallions, whatever your heart desires!
