Avocado Pesto Pasta

You'll need


1 ripe avocado

1 package of basil (or around 1/2cup-1cup of basil leaves)

olive oil

parmesan cheese

lemon juice

leftover pasta (can be GF)


Add avocado and basil to a food processor with olive oil. You can add more as it processes to reach desire consistency. Add about a tablespoon of lemon juice and some parmesan cheese, salt and pepper, and blend again. Top cold leftover pasta and you are ready to eat! Add some tomatoes for color, or in my case, I added Trader Joe's chili onion crunch for a slight kick.
