You'll need
kale (curly kale works best for this salad IMO, however this time I used dino kale)
white beans
garlic
lemon juice
goat cheese
salt and pepper to taste
First things first, remove all stems from the kale leaves that you will be using. The stems can be bitter and are unnecessary. This can be tedious, but always worth it for me! Place kale in a bowl and add salt generously. Then, you are ready to start massaging your kale. The salt will help provide moisture to soften your kale as you massage it. Once it is massaged to your liking, set aside. I always like to try a piece and if it is softer and seasoned well, you've massaged it enough.
Get out a frying pan and put on the stove at medium heat. Cook garlic in olive oil until fragrant. Then, you are ready to add your beans. Make sure to strain them before putting in pan! Cook down the beans until they are warm and garlic-y. Toss the beans over your kale and add goat cheese as well. In another smaller bowl, whisk together some lemon juice, olive oil, salt and pepper, and then pour on your salad as a dressing. Mix up and eat!
