Potato Crusted Quiche

You'll need:


- potatoes (white or sweet)

- eggs

- almond milk

- tomatoes

- onion

- cheese

- avocado

- hot sauce (optional)


Slice potatoes into thin disks. Line pan/cast iron with raw potato slices, seasoning with salt and pepper and drizzling with oil. Scramble eggs in separate bowl, option to add a splash of milk to make creamier. I used 4 eggs for this, however depending on the size of your pan, you can use more. Season the egg mixture, and then add fillings (tomatoes, onions, cheese) and stir together. Pour egg mixture into pan and bake at 375 for about 40 min or until the eggs are set. Top with sliced avocado and hot sauce.
