You'll need:
- sweet potatoes
- black beans
- corn
- shredded cheese (I use a lite Mexican blend from Trader Joe's)
- cumin
- garlic powder
- chili powder
- red onion
- scallions
- kale
- hot sauce (optional)
Slice sweet potatoes into thin disks. You can use a regular knife, or if you would like them thinner and more chip-like, use a mandolin. Toss in olive oil, salt and pepper, and add to oven at 400 for 30-40 minutes, depending on how thick your sweet potato slices are. While the sweet potatoes are baking, sauté black beans, corn, and red onion in a pan with olive oil, garlic powder, cumin, and chili powder. In a separate pan, add chopped kale with olive oil and fry until crispy. When potatoes are done, add cheese as well as bean/corn/onion mixture and bake a few more minutes until cheese is melted. Add kale, scallions, and hot sauce once out of the oven before serving. Enjoy!
