Eggplant Pizzas

You'll need:

- eggplant

- tomato sauce (either homemade or store bought)

- mozzarella cheese

- pepperoni

- any additional pizza toppings you may like (optional)


Slice eggplant into discs, either removing skin or keeping it on, depending on preference. Brush each side with olive oil, and season with salt and pepper. You can either grill these pieces of eggplant until soft, or place in the oven at 400 for about 35 min, or until they are no longer firm. Top with sauce, cheese, and toppings, then place back in oven on broil until browned.
