You'll need:
2 cups chicken stock
1 can petite diced tomatoes
1 can corn
1 can beans
1 onion (red or white)
leftover shredded chicken
cumin
salt and pepper
garlic powder
chili powder
Optional toppings:
sour cream/plain Greek yogurt
shredded cheese
tortilla chips (OR fry up your own tortilla strips using corn tortillas!)
avocado
jalapenos
lime wedge
Sautee onions in a large pot with olive oil. Add spices (season to taste) and cook until translucent. Add in chicken stock, canned tomatoes, canned beans, and corn. Bring to a boil. Once it reaches a boil, bring down to a simmer and add shredded chicken. Cover until ready to eat. My favorite things to add are Greek yogurt (makes it SUPER creamy), cheese, and chips. Crunch the chips right on top before eating and then mix it all up! The chips maintain some of their crunch while also soaking up the flavors of the soup. This will be a staple in your household, as not only is it delicious but can also be made in a crockpot for those who have less time in the kitchen!
